I came up with this recipe for dinner one day by using ingredients I had in my house after my husband and I had finished a round of golf and we were both starving! This has become a favorite for us on many occasions. It is great for parties, a meal on the go, or just a easy, quick and healthy lunch or dinner anytime. Hope you enjoy it!
Ingredients per wrap:
*1 Mission Carb Balance Soft Taco Size Tortilla
*1 TBLS of Classico Basil Pesto
*1/2 cup of spinach leaves
*1/2 cup of HEB Rotisserie Chicken (shredded)
(Or sautéed chicken you make)
*1/8 cup of diced red bell peppers
*1/2 oz of mozzarella cheese (diced)
**I add diced fresh tomatoes to mine but not everyone likes tomatoes.
Place tortilla on plate. Spread 1 TBLS Basil Pesto on tortilla. Then, add spinach leaves on pesto and then layer chicken,(Optional: add 1/2 TBLS of Basil Pesto on top of chicken), mozzarella cheese, & red peppers. Fold tortilla to make a wrap. Cut in half or keep whole. Enjoy!
